    The real question, is are you gonna kill em with a red sauce, or a white one? Fry fish prior or stir it up to hid the small slivers of glass.

    Red sauce. Prefer paleo friendly. And not too spicy so Colt can enjoy it.

    I dunno about cooking the fish in...never done it before.

    My dads got a one of the best catfish stew recipes i have ever had ill see if i can dig it up.

    Process is pretty simple. Par boil some taters and onions.

    Put a layer of taters and onions on the bottom of pot.

    Take and put a layer of flash fried catfish on top of said taters and onions. Throw in some fatback, smoked jowls, or even bacon intermittently in the catfish.

    Repeat until you have reached the top of the pot.

    Fill pot with the "red sauce" you think will suit your pallet. I know a lot of folks use V8 and various shook out seasonings. My peeps did a simmer with stewed maters with ham hocks, okras, peppers and such.

    Cover and simmer on low. DO NOT STIR.

    Your stew should come out with pretty chunks of catfish and taters. Use corn bread to sop up the broth.

    Just remember, stews aren't real "recipes". Folks made stew with what they had at the time. Play with the ingredients until you find your groove, and remember it. The real secret is in the process.
