    Default HS, 5/4

    I actually had a few things I was going to post up after this weekend. I grew tired, didn't take many pics, and by last night I just wanted a burger. I'd figure I'd post one more until I got into fish. I really have to limit red meat to about once a month.

    I've got a new customer raising eggs, quail eggs.




    Just shy of a pound of fresh ground, I could have put more fat in it. There's some bacon on it, and then I made this maple aioli. It's maple mayonaisse honestly, I whipped it up because I wanted something to add to the bacon and eggs.



    It was good, and there are two things in life I like, runny yolk, and fat off a ribeye.

    Ralph, I want you to know up front that I like you and I think you are for the most part a good guy and a better than average at home cook. But that is the queerest hamburger that I have ever seen.

    I ate a burger just like that one time, minus the egg and syrup mayo. I spent the night with my head in toliet and the next day with an IV in my arm. It does look good though...

    RB, no worries, it's cool. I liked it. I was cooking breakfast for dinner for the kids, but I wanted a burger. Seeing as someone dropped me off 70 someodd quail eggs, I've been using them, a lot. Then Willk dropped me off a jar of them pickled Monday afternoon.

    I'm a grown up. If I prefer to grind my own burger, or if I get good meat, I will eat them on the rarer side.

    Well.....looks like I will be going to get a burger for lunch.....but I know it will not be that good.

    I, too, am a grown up. I ground up that bad burger and ground up roughly 250 lbs last fall. A rare steak, yeah. Pork loin at 135 degrees, yeah. Medium burger ain't happening.

    Well, you don't have to eat it.

    But, as long as I'm cooking them at my house, they'll look at least as rare as my liquor peddling friend has posted here.

    I would have been in if you had put it between 2 pancakes and used a regular egg. Quail eggs are annoying to me. I had a guy give me some one time. I messed with them at the house one time and found myself wishing that they had gotten fertilized and hatched and he had given me the resulting quail. I'm funny about sweet stuff on hamburgers too. I eat mid rare burgers though.

    The only part about them that bother me is that right under the shell some of them have a tougher membrane. I did make french toast for the kids, I couldn't of functioned though if I went with that.

    I'm just glad a few started posting back on here. I normally don't post anything but what I kill or catch, it's a lot better than reading through that turkey forum.

    I used to enjoy wild turkey eggs when i kept a few hens.Talk about tough membranes , near need a hacksaw on them babies!
