    Default my wife has crabs

    took the kids crabbing. stopped keeping them after about a dozen. steamed em and ate em but wifey sat there drinking beer and picking the leftovers. I would say I have a solid 1.5 cups of pure, unadulterated crab meat.

    crab cakes? kinda boring. she crab soup? tempting. what else do you cheftains (my word) think I could whip up?

    They make a cream for that.

    Nothing boring about good crabcakes, a little dijon cream sauce. Mmmm.

    Not much better than lump crab coming from someone elses hard work...maybe going to an oyster roast with someone who doesn't like oysters but likes to shuck.

    You could do a crab stuffed flounder as well.

    This has been used in "trade" numerous times...

    Meeting Street Crab (original version shown here) condensed recipes avail. online
    1 pound lump crabmeat, picked over all shells gone
    4 tablespoons of butter
    4 tablespoons of flour
    1 teaspoon of dried mustard
    1/2 teaspoon of cayenne
    Salt and pepper
    1 tablespoon butter and 3 shallots minced
    2 cups of warm cream
    1 teaspoon of Worcestershire
    5 tablespoons of dry Marsala or Sherry
    1 -1/4 cups of grated cheddar cheese
    1/2 cup of chives
    Fresh breadcrumbs


    Pick over crabmeat; set aside. Melt the butter. Whisk in the flour and let cook until golden–add the mustard, the cayenne and salt and pepper.

    In a separate pan, melt the 1 tablespoon of butter and saute the shallots.

    Slowly whisk in the warm cream on low heat and then add the Worcestershire and sherry/marsala.

    Remove from heat and stir in the crabmeat. Add minced shallot and 1 cup of the cheddar cheese, saving 1/4 cup for the top.

    Add the chives, also saving a few for the top.

    Put the mixture in a generously buttered casserole and top with breadcrumbs mixed with cheddar and chives.
    Drizzle with butter on top and bake at 375 until golden brown and bubbling.

    Easy Crab Dip
    8 oz soft cream cheese
    1/3 cup Mayo
    1 tbls mustard
    Little horseradish if you want
    1-1/2 tbsp minced onions
    1/2 tsp seasoning salt
    little parsley and dash of garlic powder
    mix it all together with bout 6 oz of crab meat. Good stuff
