    Don’t need seasoning or reverse sear. What grill temp and how long per lb. got meat thermometer

    Two 8.5 lbs trimmed and tied cooked Indirect @375 for 55 minutes when I pulled them at 127 to rest for 20 minutes

    I let them sit out on the counter for a couple of hours in vacuum bag to get close to room temp. Instaread thermometer had them @63 when I put them on the egg

    I let it sit for couple of hours on counter. Was still only 51*. Got joe up to 500 and seared and cut heat down to 350. Took off when internal was 129. It was marvelous. Hard to mess up a good cut of beef
