    Default fried fish

    what's yalls best fried fish recipes? I like mine dipped in hot sauce, battered then dropped in the deep frier. Especially fresh catfish nuggets.

    Flour, then dip in a wash of beaten egg / milk.

    Then dredge in / coat with House Autry seafood breading OR panko bread crumbs.

    Fry em up.

    Fried fish is best kept simple, IMO.

    If using the House Autry, I like buttermilk instead of egg wash, and don't forget the salt and fresh cracked pepper. Serve that up with a few bottles of hot sauce and you are in bidness.

    Yes sir, Swampy. I do the same thing, only I go one step further. Like you, I dust with seasoned flour, I do the eggwash and then the seafood breader, but then the fish goes back into the eggwash and through the breadcrumbs. I'm a double breader, but not a double dipper.

    Tell ya something else, fellas...if ya want something REALLY good to put on yer fish, take a handfull of fresh parsley, a palmfull of garlic cloves, olive oil, and a pinch of something spicey (like a pablano), throw it all in a processor and let it go for about thirty seconds. I'm tellin ya, this shit is so good that you'll be walkin down the road mindin your own bidness and out of nowhere, you'll just start daydreaming about it.

    as like most post below...

    Cant remember the name but I got some seasoned cajun breader mix from Bass Pro that I mix with House Autry-I normally add a little extra fresh cracked pepper to it--dip into egg wash w/hot sauce then shake in the bag- into the grease- I normally let the fish sit in the "dustin' bag" a minute or two to get a thicker crust-- It aint rocket science but its damned fine eatin'

    Anything more than a lightly seasoned meal/flour or cracker meal mixture is a waste of good fish...
