    Fresh Spanish is great (day of), I still like butter over grilled Wahoo (over cooking any fish is a horrible thing, but in Wahoo it's really true), I've eaten fried BSB all week long, and I'd have to say I love it, I'm a huge fan of Triggers, I enjoy Snapper, for some reason I've been half and half on Grouper, Tuna I have to be in the mood even though I like it, Salmon is nice, but not the shit you get around here - I'd rather eat a damned chicken breast sometimes over a piece of farm raised salmon, and that'd all I have to say about that...     Its a texture/flavor thing. Just like cobia. Too much like a plain porkchop.

    I pretty much only grill fish. Now, sashimi'd wahoo is awesome.

    If i had to list fish in order of grubbness, it would go like this:
    Yft sashimi
    Fried yellow perch caught through the ice
    Halibut..cooked anyway
    Spring chinook grilled
    ...

    Then wahoo is around 43rd.

    Where do you rank Black sea bass? They're in my top 5 based on versatility as well as pure stupidity.

    My top 5...all local

    Yellowfin tuna (well it used to be local)
    Triggerfish
    Black sea bass
    Tripletail
    Barrelfish

    Wahoo and Sheepshead are runners up.

    BB...yellow perch is the only freshwater fish that is in the top 20.

    BSB's are very good. I have this recipe i only do BSBs in.
    Grease pan, roll bsb in bread crumb..on top of filets put spinach leaves blanched in cook wine and garlic on top, sprinkle fresh parmesan..bake for 15 min. Grub.

    Its hard to list fish, ive eaten so many from all over...bsb is very similiar to a greenling off the west coast. Just good fish.

    wahoo ceviche is very good. Wahoo coated in mayo and grilled with a little pepper is also good.

    -Are you implying you also dont think cobia to be very good?

    I make a kick ass wahoo ceviche...

    Cobia, well, you know, it is decent, probably rank it in the mid 20s. Cobia very similiar to white sturgeon. Almost identical meat consistency and taste.

    Had grouper ceviche the other night and it was pretty tasty, and I love me some grilled cobia.
    I'm like a duck: calm above the water, and paddling like hell underneath....
