    Not bad, still an insult to the dove. Fried or wrapped in bacon would have made him happy!!

    You'd like this Paul, the doves were soaked for just a little bit in balsamic and honey. I was looking for something to give them a pretty sear. I was about to do them a tad "bog" styles, but it's been a couple weeks since I've had some on the rarer side.

    Damn that looks good HS. I was gonna fry some tomorrow along with a pan of onion gravy, grits, and biscuits. My idea seems very insignificant after looking at this!

    Years ago, after a very long night involving a collard green and ham hock risotto special. I swore that if I had anything to do with it, I'd never make risotto again. Looks good Ralph.

    It's one of those things that I really like, but lately it seems difficult to order. This one, the risotto, didn't turn out perfect, but good enough for what I was left to work with.
    I guess I'll start cooking fall/winter hunting plates even though this weather doesn't seem to want to work with me. And thanks

    Ha, not trying to be.. I just like to eat with the seasons, or try to, not all of it. I mean it's like walking around in July and thinking, "man, you know I'd love some deer chili". It's like eating a store bought, hot house tomato. It just isn't right. When I think of mushroom risotto I think of fall. I mean it is, but it ain't, fall. I like to cook, catch, kill, and eat within the seasons. It makes me a tad more driven, like really wanting those first few doves, then moving on to some woodducks.

    ive been waiting to make a stock with a ham bone and the weather forecast people suck fucking ass

    nice plate. sorry you had to walk under that cedar tree on the way to the supper table and got stuff all over your plate.....
