Quick throw together. Boiled the saffron rice in the stock I saved from boiling the chickens yesterday. Meat was prepped so this whole thing didn't take long at all. Added some tomatoes and jalapeños and the pulled chicken and let rice simmer. When it was done- I added some salsa I made Sunday, cilantro, green onions, sour cream, and crumbled goat cheese. Squeezed a half a lime and it was tasty!
