we filled two tags today. One 11 foot and one 12'2" Good killing. Its amazing how much bigger a 1 foot length makes in a gator

So i fried up some gator tail this evening off this big boy. Was pretty good. Some pieces were a little chewy. I may have cooked a few pieces a little to long. Anyone got any tips for cooking gator?
Cover in cornmeal mixed with salt and pepper. Fry it for 4 minutes at most. It gets tough easily. Tail meat is my favorite.

thats basically what i did. Maybe just the ones i cooked a little to long were the tuff ones. But when i say cooked to long they may have been on the pan a minute or two longer than the others
